Clos d'Yvigne makes two dry white wines from a mix of
sauvignon, semillon and muscadelle - a classic 'blanc sec', Princesse de Clèves,
and a barrelled version, Cuvée Nicholas.
Princesse de Clèves is macerated overnight to give it body and structure. The
process yields a wine full of finesse and fresh fruit. It is expressive on the nose and
clean on the palate with crisp, generous citrus flavours, and a great return of
fruit.
Cuvée Nicholas
follows the same vinification method, including the overnight maceration. Thereafter, it
is fermented in oak, which produces a more complex flavour with a longer palate
