Patricia Atkinson's sweet white wine has made her famous with wine makers, wine merchants and the discerning drinkers who have discovered this star among dessert wines. Her wine and its acclamation have created a revival in the reputation of the Saussignac appellation to such a point that it rivals its better-known neighbours in Sauternes and Barsac.
The semillon and muscadelle grapes for the Saussignac are picked selectively and under close supervision over six or seven separate picks. In each pick only those individual grapes with noble rot (botrytis) are selected, leaving autumn's morning mists and afternoon sun to create more botrytis on the remaining grapes. The grapes are pressed immediately and the juice is left to settle overnight. It is then racked and put into new oak barrels for the fermentation process. It is aged in oak for two years. The result is the famous Clos d'Yvigne Saussignac, a wine that brings a golden splendour to the eye, an orchard of luscious fruits to the nose and a casket of sweets to the mouth: honey, apricots, vanilla, quince, oranges, butterscotch and a hint of liquorice. The intense sweetness is well balanced by the touches of natural acidity. An elegant, exceptional wine that will age well. |
